“le Zavardone” with Mora Romagnola sauce and Squacquerone

Le Zavardone are a Romagna typical and traditional dish, more specifically of Rimini province and especially of the town of its hinterland: Verucchio. They are born as a poor dish, prepared by the wise hands of the azdore (in dialect: the Romagna housewife), is rich in taste and sensations.

At the Mastin Vecchio restaurant they are really "favourite dish".This dish is worth coming back for, many of our guests know it well. The preparation of Zavardone is quick and simple, the dough should be made rather thick and coarse, the cut, each is different from the other, accompanied by a rich Mora Romagnola (breed of pig) sauce and a good Sangiovese red wine glass.
